Vegan Red Velvet Cupcakes

Vegan Red Velvet Cupcakes with Better Than Cream Cheese Frosting
 It's my birthday week, so I decided to make myself some birthday cupcakes. I had made a red velvet cake before, but was not totally satisfied with my recipe... it was a little too dense. I updated my recipe to add some apple sauce to replace part of the oil, and the cupcakes turned out moist and fluffy. The perfect density and texture. I made a Better Than Cream Cheese and Vanilla frosting, which was the perfect complement to the light chocolate flavor of the Red Velvet cupcakes. Delicious. The perfect happy birthday to me!

When given strawberries, make a strawberry tart!

My lovely friend Grace and I go walking every Saturday. When we met last Saturday she arrived with a gift - strawberries from the farmer's market! If you have ever had the organic farmer's market strawberries, you'll know just how sweet they are. By far the best strawberries out there. I started to devour the strawberries because they were so good. Then I had an idea.... why not make a vegan strawberry tart?

The tart I made has a shortbread crust, layer of vanilla custard, a layer of strawberries, and a strawberry preserve glaze.... oh yeah, and don't forget the powdered sugar on top. YUMMMMMM. This tart is so good that when I served it to a friend of mine, she did not leave one crumb on the plate. She even asked to take a piece home so she could have more!!! Needless to say, the strawberry tart didn't last long at my house. I will definitely have it at Little Dragonfly Bakery for all to enjoy.

Pucker up! Vegan Lemon Bars

I made lemon bars awhile ago - epic fail. So, I had to try again. This time, I was successful! Hooray! They have a tasty shortbread crust and are made with fresh lemon juice and even a little lemon zest. They are so good I had to give most of them away to stop myself from eating them all.

It was exciting to make lemon bars. I remember the first time I had them. I was about 12 years old, and we had just moved to a new house in a new city. A retired couple lived next door to our new house and brought us some homemade lemon bars as a housewarming gift. These lemon bars were an absolutely delicious new taste sensation. I had never tasted any treat like it. It was nice to bake something that brought back such happy memories.

My friend Joey loves brownies. He can't think of a more delicious treat than brownies. So, I made him some brownies! He is an all around swell guy, so he really deserved some homemade brownies. He doesn't like nuts, so I left the walnuts out. I made these vegan brownies without oil, so they are also a little healthier than regular brownies. These brownies are moist and delicious. I think he may be calling me for more.

Independence Day made me think of apple pie. But, I didn't feel like making apple pie. So, I made a vegan apple cake. It was a hit at our little barbeque. Not too sweet, but very moist and delicious!

Mouth Watering Vegan Cinnamon Rolls

I spent Saturday doing something that made me extremely happy... Baking! I made vegan cinnamon rolls. I was going for cinnamon rolls that were filled with cinnamon, soft on the inside, and had delicious vanilla icing. Success! My cinnamon rolls turned out so extremely yummy. It was hard not to eat more than one! But, it was 10:30 p.m. by the time I finished, and I really shouldn't be eating sugary baked goods so late.

These cinnamon rolls were so good, I am going to use this recipe for my bakery. They were gooey and soft and all sticking together... the way cinnamon rolls are supposed to be. I just have to figure out how to get them out of the pan a little neater.

I am so happy that some friends are coming over tomorrow so I can share these tasty treats!

You know you want them.... Vegan Chocolate Chip Cookies

The cookies that made me (almost) famous.... My Vegan Chocolate Chip Cookies. This time I made them with walnuts, just to be different. My mom loves walnuts in her cookies, so it reminded me of baking with her when I was a kid. Happy memories.

I say that they made me (almost) famous because of how many friends, coworkers, and family members have loved these cookies over the years. I was working at a job about 6 or 7 years ago and would bring these in for coworkers' birthdays. My supervisor at the time told me that I should sell them.... I should have taken his advice then, but it has taken me a little while to realize that I could attain this dream.

I baked these cookies and took them to my Start and Grown Your Own Business class. I've been talking about starting my own vegan bakery all semester, so I wanted to show them what I was talking about. The response was overwhelmingly positive. The instructor said, "These are vegan?! These are delicious!" with a confused and happy look on his face. Another student said, "How'd you get them so they're not flat? All the vegan cookies I've had have been flat." Other responses were, "These are really good" and "Do you have any more?" They all agreed that I chose the right type of business to open because the cookies were so yummy.
